Puff Pastry Pizza - Tomatoes and Cheese

This is a great recipe to use as an appetizer or for lunch, simple, easy and delicious!
I love tomatoes so decided to add tomatoes and White Jasmine Cilantro Gouda this time, however, you can use different fillings or just use cheese. 

Puff Pastry Tomato Pizza (makes two pizzas)

Puff Pastry sheet - thawed and cut in half
2 medium tomatos - sliced
1 cup White Jasmine Cilantro Gouda, shredded
1 cup Parmesan, shredded
1/4 cup green onions, chopped

Heat the oven at 400 degrees. Place the puff pastry sheets side by side on a baking tray. Sprinkle White Jasmine Cilantro Gouda on each pastry sheet, an inch away from the edges. Layer the tomatoes on top of the cheese. Sprinkle parmesan on top of the tomatoes. Sprinkle some green onions. Place the baking tray in the oven for 15 minutes or so or until the pastry puffs up and is golden brown. Serve warm.
