Cheese and Tomato Pasties

This has been an amazing tomato season and I have been trying to make the most of our tomato harvest. Here is another fun and easy recipe to try. 

Cheese and Tomato Pasties

2 cups cherry tomatoes, sliced
1 cup White Jasmine Gouda cheese, shredded
1 puff pastry sheet

Heat the oven to 400 degrees. Cut the pastry sheet in four squares. Place the tomato slices and cheese on one side and carefully fold the other side on top of the filling. Pinch the ends. Place in a baking dish and place in the oven. Pasties should be ready when golden brown. Serve warm. 


Chicken Quesadillas with Cumin Gouda

There are so many ways to make a mouthwatering quesadillas with many different combinations of fillings. One of my favorite combinations is boneless chicken, tomatoes and White Jasmine Cumin Gouda. I love how easy and simple it is to make these at any time of the day also, perfect for a summer picnic! To enhance the flavors serve the quesadillas with sour cream and a spicy salsa. 

Chicken Quesadillas with Cumin Gouda

2 tablespoons olive oil
1 chicken breast, skinless, boneless thinly sliced
1/2 teaspoon whole cumin
1 cup green onions, thinly sliced
1 teaspoon chili powder
1/2 teaspoon kosher salt
1/2 cup fresh cilantro, chopped

2 tablespoons olive oil
4 tortillas
1 large tomato, think sliced
1 8 oz White Jasmine Cumin Gouda, grated
Few sprigs of cilantro

In a skillet warm up the olive oil on medium heat. Add whole cumin. Add green onions. Let everything sizzle for 3-4 minutes. Add chicken. Add ground spices. Stir everything together and let it cook for 10-12 minutes until the chicken is cooked. Switch off the heat and set it aside.

In a separate skillet heat up a tablespoon of olive oil. Place a tortilla in the pan and let it turn light golden brown, arrange some cooked chicken and tomato slices on the tortilla. Generously sprinkle grated Cumin Gouda. Place the second tortilla on top. Gently press it down and then carefully turn the quesadilla over. Remove the quesadilla from the skillet once both tortillas have turned golden brown and crispy. Sprinkle sprigs of cilantro on top and serve with spicy salsa and sour cream.

One of my favorite foods not just when the weather starts to get colder but I love this recipe all year round. It is easy, delicious and beautiful....all the elements we appreciate at White Jasmine.

Cheese Bread

1 Italian bread, sliced
1 stick melted butter
2 teaspoons garlic, chopped
1/4 teaspoon red pepper flakes
1/2 cup fresh cilantro, chopped
2 cups your favorite cheese, grated

Heat the broiler. Arrange the bread slices in a baking tray. Mix garlic, butter, cilantro and crushed red pepper flakes in a bowl. Add the butter mixture on top of the bread. Sprinkle grated cheese. Place the bread under the broiler for 3-4 minutes. Serve warm.

Easy Recipe Monday - Game Day Nachos

As the Packers won last night and we are all excited to watch the big game next weekend, I thought about putting this Nacho recipe together, it's perfect for the game day! There are numerous nacho recipes, what makes this recipe different? Well it is easy and packed with layers and layers of flavors. Enjoy!

Game Day Nachos

1 tablespoon vegetable oil
1 teaspoon whole cumin
2 cups green onions
1 pound ground beef
2 teaspoons White Jasmine Tandoori Masala
1 teaspoon kosher salt
1 8 oz fire roasted tomatoes
1 cup cilantro, chopped
4 cups Tortilla chips
2 cups White Jasmine Cumin Gouda, shredded

In a saucepan, add vegetable oil. Add whole cumin and green onions. Saute for a couple of minutes. Add ground beef, Tandoori Masala and salt. Saute everything until the beef is cooked. Add tomatoes and cilantro. Mix well and switch off the heat. Switch on the broiler. Spread the tortilla chips in a baking dish. Add the beef mixture on top of the chips, top it with Cumin Gouda and place under the broiler until the cheese melts. Serve warm.
