After all the traditional foods and desserts during the holiday season, a light and refreshing recipe is always a wonderful change. As most of our recipes, this recipe is easy, simple and delicious!
Lime and Cilantro Chicken:
4 tablespoons olive oil 4 boneless skinless chicken breasts 2 teaspoons garlic, chopped 1 teaspoon ginger, chopped 1 lime 3 whole dried chilies 1 teaspoon chili powder 1 teaspoon Garam Masala 1/2 teaspoon salt ½ cup cilantro
Add chicken in a bowl. Add 2 tablespoons of olive oil, lime juice, salt, chili powder and garam masala. Heat 2 tablespoons of oil in a saucepan, add whole dried chilies. Add chicken mixture and let it cook for a couple of minutes, add garlic and ginger. Add chopped cilantro. Let the mixture cook for 5 minutes or so, then lower the heat and cover the saucepan. Simmer for 15 minutes or so until the chicken is cooked and the sauce gets thick. Serve with basmati rice.
