Know your Food Tuesday - Coconut Oil

Coconut oil is fast becoming one of the 'super foods'. It has been known to offer proven health benefits, e.g. therapeutic effect on brain disorders like epilepsy and alzheimer's.

Coconut is considered an “exotic” food in the Western world, primarily consumed by health conscious people. However, in several parts of the world, coconut is a dietary staple that people have thrived on for many generations and have proven to have excellent health without any evidence of heart disease, despite high saturated fat intake. Knowing all this, maybe it is time to incorporate coconut oil in our diet and see what happens. Cooking is all about experimenting with new ingredients and developing our palate. Apart from all the health benefits who can object to some delicious coconut and chocolate macaroons!!
