Recipes: Chicken Caccitorie

Chicken Caccitorie

2 tablespoons olive oil
2 black cardamoms
2 green cardamoms
2 cloves
1 4 inch cinnamon stick
2 ½ pounds boneless and skinless chicken thighs, quartered
2 teaspoons garlic, chopped
1 teaspoon ginger, chopped
1 teaspoon chili powder
1 teaspoon garam masala
½ teaspoon turmeric
½ teaspoon salt
1 tablespoon olive oil
1 cup chopped onions
1 8 oz can fire roasted tomatoes
3 cups chicken stock
1 8 oz can cannelloni beans
1 cup fresh parsley, chopped

Add chicken to a bowl, add garlic and ginger. Add all ground spices and mix thoroughly. Add ½ a cup of chopped parsley. Leave the mixture aside.

Heat cooking oil in a saucepan, add all whole spices. Let the spices sizzle for a minute or so. Add chicken to the oil with the marinade. Stir the mixture for 5 minutes or so. Add chopped tomatoes and kitchen stock. Cover and let it cook on medium heat for about 5-7 minutes. Add cannelloni beans and continue to cook until a thick sauce is formed and chicken is completely cooked. Sprinkle chopped parsley. Serve with cheesy bread.
