Recipes: Sooji Halwa - Semolina Dessert 2 cups medium grain semolina Warm the oil and add cardamoms and cloves on medium heat, couple of minutes later add semolina and keep stirring it to make sure that semolina does not stick to the pan. Add sugar and water in a separate pan and leave it on medium heat. Once the semolina starts to turn light brown and all the sugar is dissolved in water. Add the sugar syrup to the semolina mixture and cover immediately. The semolina mixture would absorb the sugar syrup very quickly, remove the saucepan from heat and stir the almonds and pistachios into the semolina mixture. Save a little of both nuts to garnish. Empty the dessert in a bowl and garnish with almonds and pistachios and serve hot or cold with cream. This is my daughter Sabah's favorite dessert. www.curryandcoriander.com
