Recipes: Namak Paras - Deepfried Pastry Diamonds

2 cups plain flour
2 tbsp oil
1 cup warm water
1/2 teaspoon salt
1/2 teaspoon kalonji-nigella seeds
2 cups oil to fry

Add oil, salt, kalonji and warm water to the plain flour to make a dough. Roll out the dough and cut strips diagonally and then cut diagonally in the opposite direction to make the diamonds. Heat oil in a frying pan and fry the diamonds until they turn crisp and golden. Serve with tea.
