Recipes: Milli Sabzi - Mixed Vegetables

2 medium potatoes, cubed
1 green pepper, seeded and chopped
1 medium eggplant, chopped
1 zucchini, chopped
4 medium tomatoes, chopped
1/2 cup fresh cilantro, chopped
1 medium onion, chopped
1/2 teaspoon turmeric powder
1 teaspoon chili powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon cumin, whole
3 teaspoon cooking oil
1 cup warm water

Heat cooking oil in a saucepan and add the whole cumin. Add onions and fry both of them together. Add eggplant and continue to stir for a few minutes. Add potatoes, zucchini, tomatoes and green pepper. Stir the mixture for another few minutes and then add all the spices. Add water, cover and let the mixture cook on medium heat for 15 minutes. All the vegetables should be tender, add fresh cilantro and serve with matar pulao and any meat entrée.
