Recipes: Chicken Curry

Boneless chicken cooked with spices, onions, ginger and garlic

1 pound boneless/skinless chicken cubed
1 large onion, chopped
3 tablespoons of plain yogurt
1 teaspoon garlic, minced
1 teaspoon ginger, minced
2 cloves
1 large cardamom
1 small cardamom
2 inch cinnamon stick
1/2 teaspoon chili powder
1 teaspoon ground coriander
1/2 teaspoon garam masala
1/4 teaspoon turmeric
1/2 teaspoon salt
1/2 cup cilantro, chopped
2 tablespoons cooking oil

Heat 2 tablespoons of oil in a deep pan; add cloves, cardamoms and cinnamon stick, let them sizzle. Add chopped onions; fry them until a little golden brown. Add chicken, garlic and ginger. Fry for about 5 minutes so that the chicken is not pink anymore.

Add chili powder, garam masala, turmeric, coriander and salt. Keep stirring everything, so that the spices are mixed with the onions and chicken mixture. Add a tablespoon of yogurt at a time until the entire yogurt is used and the mixture looks a little yellowish brown. Sprinkle cilantro and cover the pan to simmer for about ten minutes. The sauce will thicken and then it is ready to serve with pulao.
