Zucchini, Peppers and Garbanzo Beans with Tandoori Masala

2 tablespoons cooking oil
˝ teaspoon whole cumin
˝ cup chopped onions
2 cups zucchini, chopped
1 large red pepper, chopped
1 large yello pepper, chopped
1 8 oz fire roasted tomatoes
3 cups cooked garbanzo beans
1 teaspoon salt
2 teaspoons White Jasmine Tandoori Masala
1 teaspoon chili powder
˝ cup chopped cilantro

Heat oil in a sauté pan, add whole cumin and let it sizzle. Add chopped onions and sauté them until light brown. Add zucchini and peppers, sauté the mixture for 2 minutes, add fire roasted tomatoes. Add salt, Tandoori masala and chili powder. Add garbanzo beans. Mix everything together, add chopped cilantro and leave it to simmer for about 15 minutes. Serve as a side or main dish.
