Recipes from Everyday Cooking Aloo Paratha-Pan fried bread filled with potatoes 2 medium potatoes, boiled, peeled & mashed2 green chilies, chopped (optional) 1 cup green onions, chopped ½ cup cilantro, chopped 2 cups plain/wheat flour ½ teaspoon chili powder ½ teaspoon ground cumin 2 teaspoons salt 2 tablespoons cooking oil for frying Add chopped cilantro, green chilies, green onions, chili powder, ground cumin and 1 teaspoon of salt to the mashed potatoes. Mix well and keep aside. Mix flour with salt and knead to make a smooth dough. Divide the dough into small parts. Make a well in each small round of dough and fill it with potato mixture. Close the well and roll out into a circle. Heat a frying pan and pan-fry the paratha, by adding a 1/4 teasppon of oil/butter while in the pan, serve hot with any main meat or vegetable dish.
