Recipes from Everyday Cooking Tandoori Cod 6 cod filets, medium2 tablespoons garlic, chopped 2 tablespoons olive oil 2 teaspoons White Jasmine Tandoori Masala 1 teaspoon salt 1 tablespoon olive oil 2 whole green cardamoms 2 whole black cardamoms 2 whole cloves 1 4 inch cinnamon stick 1 medium yellow onion, chopped 1 8 oz fire roasted tomatoes 1 teaspoon White Jasmine Tandoori Masala ½ teaspoon turmeric ½ teaspoon salt ½ cup cilantro, chopped Season cod with salt. Mix garlic, olive oil, turmeric and White Jasmine Tandoori Masala in a small bowl. Brush it on the cod filets. Set aside. Heat up a nonstick saucepan pan, add a tablespoon of olive oil. Add all whole spices and let them sizzle for a minute or two. Add chopped onions. Saute the onions until golden brown on the edges. Add tomatoes. Add Tandoori Masala, turmeric and salt. Add cilantro. Let the sauce cook for 2-3 minutes. Gently place the filets in the pan. Cover the pan and cook for 3-4 minutes and gently turn the fish filets over. Leave to cook for another 2-3 minutes. Serve warm with a side salad, basmati rice or couscous.
