Recipes from Everyday Cooking Chicken in Cilantro-basil Pesto on Penne Pasta Cilantro-Basil Pesto Chicken on Penne Pasta:2 pounds boneless, skinless chicken, cubed 2 teaspoons garlic, chopped 2 tablespoons olive oil 1 cup fresh basil, chopped 1 cup fresh cilantro, chopped 2 tablespoons olive oil 1 teaspoon whole cumin 2 teaspoons White Jasmine Tandoori Masala 1 teaspoon salt 1 large red pepper 1 large orange pepper Add chicken in a bowl, add 2 tablespoons olive oil, garlic, basil and cilantro. Mix well and set aside. Add 2 tablespoons olive oil in a sauté pan, add whole cumin. Add chopped peppers. Add chicken mixture to the sauté pan and stir gently on medium heat and leave on medium heat to cook for about 10 minutes. Prepare penne pasta per instructions on the box, add chicken and peppers mixture to the pasta. Serve with a salad on the side. www.whitejasmine.com
