Recipes from Everyday Cooking Pulao Pulao-Rice cooked with onions and whole spices:2 cups uncooked Basmati rice I small onion, chopped 1 tablespoon cooking oil 2 cloves 1 large cardamom 1 small cardamom 1 4 inch cinnamon stick salt Wash rice thoroughly and leave to soak for 15 minutes. Heat oil in a pan, add the cloves, cardamom, and bay leaf. Let it sizzle for a minute. Add chopped onions and fry them until light brown. Add rice and 3 cups of water. Let it come to a boil and then reduce heat and leave to simmer for 15-20 minutes. Can add a pinch of turmeric for color. Serve with chicken curry. www.whitejasmine.com
