Recipes: Shrimp Curry

Shrimp Curry:

2 tablespoons cooking oil
2 black cardamoms
2 green cardamoms
2 cloves
1 cinnamon stick 2 inches long
1 medium onion, chopped
2 medium chopped tomatoes
1 teaspoon garlic, minced
½ teaspoon ginger, minced
1 teaspoon garam masala
½ teaspoon chili powder
½ teaspoon turmeric
1 teaspoon salt
1 pound frozen shrimp, de-tailed and de-veined
1 bunch fresh cilantro, chopped

Heat cooking oil in a saucepan, add all whole spices. Let the spices sizzle for a minute or so. Add chopped onions and sauté them until they turn light brown. Add chopped tomatoes, garlic and ginger. Stir everything around for a couple of minutes. Add ground spices and shrimp. Stir everything for a few minutes add chopped cilantro. Cover and cook on medium heat for about 10 minutes or until shrimp is cooked and sauce has thickened. Serve warm with basmati rice.
