Recipes: Saag Aloo

Saag Aloo - Spinach with Potatoes:

3 medium potatoes, peeled and cubed
2 pounds fresh spinach, chopped
1 medium onion, chopped
2 medium tomatoes, chopped
1 teaspoon garlic, minced
½ teaspoon ginger, minced
3 dried red chilis, whole
½ teaspoon turmeric powder
1 teaspoon cumin powder
2 tablespoons cooking oil
½  cup warm water

Heat the cooking oil in a saucepan and add the dried chilis and onions. When the onions turn golden brown add the potatoes. Add garlic, ginger and tomatoes. Continue to stir the mixture and add all the other spices. Add water and let it cook on medium heat for about 10 minutes or the potatoes are half cooked. Add spinach, cover and simmer for 15 minutes. Serve with pulao rice or paratha.
