Recipes: Potato Patties

Potato Patties:

3 pounds of red potatoes
½ teaspoon chili powder
½ teaspoon salt
½ teaspoon ground cumin
½ teaspoon whole cumin
Fresh cilantro chopped
1 egg
Oil to deep fry

Boil the potatoes until soft, not too soft but rather more like potato salad. Take the potatoes out of the water and leave them to cool. Peel the potatoes and crush them with a fork or hand crusher. Add all the spices, cilantro and egg. Make patties and deep fry in hot oil. Serve with coriander/cilantro sauce or mint and yogurt sauce.

Tips:

  • Make sure to take the potatoes out of the water as soon as they are done.
  • Spices mix well when potatoes are still warm.
