Recipes: Palak Chicken

Palak Chicken - Boneless chicken cooked with fresh spinach:

2 tablespoons cooking oil
2 black cardamoms
2 green cardamoms
2 cloves
1 cinnamon stick 2 inches long
2 medium onions, chopped
2 pounds boneless chicken, cubed
1 teaspoon garlic, minced
1 teaspoon ginger, minced
1 teaspoon salt
1 teaspoon chili powder
1 teaspoon garam masala
½ teaspoon turmeric
3 medium tomatoes, chopped
1-½ pounds fresh spinach, chopped
½ cup warm water, if needed

Heat cooking oil in a saucepan, add all whole spices. Let the spices sizzle for a minute or so. Add chopped onions and sauté them until they turn light brown. Add chicken and saute it for a few minutes. Add garlic and ginger. Stir everything around for a couple of minutes. Add chili powder, garam masala, turmeric, salt and ground coriander. Add chopped tomatoes. Stir everything around for a couple of minutes. Add chopped spinach. Cover and cook on medium heat for about 30 minutes or until chicken is tender and all the liquid is reduced to a thick sauce around the chicken. Serve warm with pulao rice or parathas.
