Recipe: Springy Salad (Serves 2)

1 head romaine lettuce
2 cups sliced new red potatoes
1 cup green beans
2 hard boiled eggs
12 cherry or grape tomatoes
1/2 sliced red onion
Low fat French vinegar and oil dressing

Boil red potatoes until tender. Cook beans for 3-4 minutes. Place potatoes, beans, halved tomatoes and red onions on plate of lettuce and drizzle with dressing. Top with hard boiled egg and black pepper.
