Everyday Cooking Guest: Laura Houlihan

I grew up in Delafield, Wis., and attended Cardinal Stritch University in Milwaukee. I have over 10 years of media, marketing and event experience—but I discovered my passion and love for women’s magazines after managing skirt! Magazine in Jacksonville, Fla. After returning to Wisconsin and finding BRAVA, I knew that I had found my “home.” It is such a great feeling to make a positive impact on the lives of local women! 

I married my husband, Kevin, last November and love spending time with him and our chocolate Lab, Bentley, and cats, Madeline and Chloe. I would have more pets if the City of Fitchburg allowed me too! 

I love a good glass of wine, laughing with friends, traveling, dancing-themed TV shows and fashion. Shoes are my weakness. I also enjoy baking, but cooking? Not so much—I leave that to my husband. But I am giving gardening a good try

Recipe: Turkey Loaf

2 Tablespoons Butter (I have also used Olive Oil when I’m out of butter)
1 Cup Chopped onion
3 Cloves of garlic – minced
1 Package of Ground Turkey Meat (I use Jenni-O brand)
½ cup breadcrumbs
1 large egg
¼ cup catsup
¾ teaspoon salt
½ teaspoon pepper
One loaf pan (I prefer to use a glass loaf pan)

Pre-heat oven to 350

Chop Onions and mince cloves – mix together in a bowl and set aside

Take medium-small sized skillet -  mix butter (or Olive Oil) with onions and minced cloves on Medium heat – stir occasionally and cook for 5 minutes

Then, put back in the bowl and cool for 5 minutes or so

Next, mix the turkey, breadcrumbs, egg, ¼ catsup (you can add a little more if you like, but not too much more – it gets runny), salt, pepper – and also add the onions/garlic mixture from the stove - - - and MIX WELL!

I use my hands to mix it – its old-school, but it’s what my Mom & Grandma used to do

Put into loaf pan – and spread additional catsup over the top – some people like a  little, some like more…I usually cover it like I would a cake with frosting.

Bake for 60 minutes – let stand for 10 after it comes out of the oven…
